I had a hard time embracing some of the food in Hong Kong, like congee (often delightfully served with various pig parts), but bakkwa, now that’s a different story. Bakkwa is a salty, sweet, thinly-sliced square of pork that has been smoked and roasted to perfection. It has a consistency similar to jerky, but much more moist and tender than any jerky I know. Imagine maple-glazed bacon without the fat. And there are stores devoted to selling bakkwa alone. Amazing.
